Whole wheat bread recipes
1: Whole Wheat Bread (2 loaves; This recipe was found on the package of whole wheat flour)
INGREDIENTS

- 2 1/4 C warm water (~105F)
- 2 tbs brown sugar
- 2 pkg active dry yeast
- 5-6 C whole wheat flour
- 3/4 C non-fat dry milk
- 1/3 C sugar
- 1 tsp salt
- 1/3 C vegetable oil
- 1 C whole wheat flour (or bread flour)
PREPARATION
- Dissolve yeast and brown sugar in 2 C warm water.
- In a large bowl, blend 4 C whole wheat flour and other dry ingredients.
- Slowly mix yeast into the flour mixture. Rinse yeast from the cup with remaining 1/4 C water, and add to dough.
- Add oil slowly, blend well. Stir in only enough flour so that the dough cling together.
- On clean, lightly floured surface, knead for ~10 min or until smooth.
- Place in a greased bowl, loosely cover, and let rise in a warm place until double in bulk.
- Shape dough into two loaves, and place one in each pan (grease the pan if not non-stick).
- Cover, and let rise again in a warm place until doubled. (optional: sprinkle sesame seed on top)
- Bake at 400F for 10-15 min, then at 350F for 20-25 min.
- Remove from pans, let cool on wire racks.
2: Parmesan Herb Bread (2 round loaves; Recipe from a Fleischmann's Active Dry Yeast package "recipe #623")
INGREDIENTS

- 2 envelops active dry yeast
- 2 C warm water (~105F)
- 2/3 C olive oil
- 3 tbs sugar
- 3-1/2 C whole wheat flour
- 2 tsp salt
- 3/4 C shredded Parmesan cheese
- 2 tsp garlic powder
- 2 tsp dried basil leaves
- 1 tsp dried oregano leaves
- 1/2 to 1 C bread flour
PREPARATION
- Dissolve dry yeast in warm water in a large bowl.
- Add oil, sugar, whole wheat flour, and mix until smooth.
- Let sponge rest for 20 min.
- Mix down: add salt, cheese, garlic powder, basil, and oregano.
- Stir in enough bread flour to make the dough easy to handle.
- Knead about 10 min, or until smooth.
- Shape into two rounds, and place them on greased baking sheets.
- Loosely cover and let rise in warm place until double in size (~45 min).
- Bake at 350F for 30-35 min.
- Remove from baking sheets and cool on wire rack.
